Zucchini Parmesan Crisps


Serves 4


1/2 cup vegetable oil

1 cup Panko bread crumbs

1/2 cup grated Parm cheese

1 Zucchini sliced to 1/4" thick rounds

1/2 cup all purpose flour

2 med eggs, beaten



1. Wash and cut Zucchini

2. Combine Panko crumbs and Parm cheese and mix in a small bowl.

3. Dredge Zucchini rounds in flour, then eggs, then Panko mixture. Press Panko mixture onto round.

4.  Fry in oil until evenly golden and crispy, about 1 minute on each side. 

This is sooo easy and an alternative to potato chips!  I might try these next time with egg whites, wheat Panko crumbs and almond flour to make them  healthier!!
